Asparagus Usili Recipes

                         

                               Asparagus Usili Recipes


 

                                  Usually  south Indian makes parupu usili using dals and vegetables. I am not a big fan of asparagus,so thought to make a different way that's what i made this Asparagus Usili.It was really came out at very well and gave different taste also. This dish has lot of protein and fiber content it will help at diet time.




Ingredients needed


  • Asparagus - 1 bunch
  • Toor dal/Chana dal - 1/2 cup
  • Onion - 1 medium size
  • Cumin seeds - 1tsp
  • Asafoetida /Hing - 1/4 tsp
  • Garlic(optional) - 2 cloves(crushed)
  • Mustard seeds - 1 tsp
  • Urad dal - 1 tsp
  • Red chili - 2
  • Curry leaves - 1 spring
  • Oil - 1 tsp
  • Salt - to taste
  • Turmeric powder - 1/4 tsp


Method


  1. First Wash and cut the Asparagus into very small pieces and cut the onion also into small pieces.Usually in usili we don't add the onions , but i added here for crunchiness .
  2. Soak the toor dal/chana dal for at least an hour in water.After that drain the water and grind them to a coarse texture.
  3. Heat oil in a pan,season with mustard seeds,urad dal, cumin seeds,red chili and curry leaves.
  4. Then add onion and fry them until it turns to pink color and then add asparagus fry until raw smell disappears. 
  5. Add coarse toor dal and salt then fry about 3 -5 minutes on a medium low flame.
  6. Serve with rasam rice or sambar rice and enjoy it.
